
One three-block meal
Ingredients:
1 cup dry Dr. Sears’ Zone Fusilli cooked following package directions
1 teaspoon olive oil
½ cup Zucchini, chopped
½ cup Summer squash, chopped
4 cherry tomatoes, halved
1 teaspoon garlic, minced
2 teaspoons parsley, minced
1 teaspoon oregano
1 teaspoon Parmesan cheese
Salt and pepper to taste
Instructions:
Place a large non-stick skillet over med-high heat and spray with olive oil. Add zucchini, summer squash, cherry tomatoes and garlic and sauté until soft and slightly brown. Add parsley and oregano. Add cooked Zone Fusilli to pan and toss with olive oil. Top with Parmesan cheese and serve.
Notes: Substitute zucchini with eggplant, artichokes or other non-starchy vegetable for a healthy and delicious meal.
